Golden crumble flapjacks

    This fuss-free oat flapjacks contain a hint of vanilla and cinnamon for a warm, aromatic sweetness. The addition of flour and baking powder gives these flapjacks an irresistibly soft, moist and crumbly texture.

    • 200g unsalted butter
    • 5 tablespoons golden syrup
    • 4 tablespoons dark brown soft sugar
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon vanilla extract
    • 1 pinch salt
    • 150g porridge oats
    • 2 tablespoons plain white flour
    • 1 teaspoon baking powder

    1. Preheat the oven to 160 C / Gas 2-3. Line a cake or brownie tin.
    2. Melt the butter and syrup together in a pan on low heat. Once smooth, stir in the brown sugar, cinnamon, vanilla and salt.
    3. Take off the heat and add the oats, flour and baking powder to the pan. Mix well. (If the mixture becomes too stiff to mix, put it back on a low heat.)
    4. Add to lined tin and smooth out. Bake until golden on the top but still soft, about 20 to 30 minutes. It will harden a little once cool so don't over-cook!
    5. Cut into squares and enjoy while still warm or once cooled.
