Golden Crumble Flapjacks

This fuss-free recipe uses a hint of vanilla and cinnamon for a warm, aromatic sweetness. The addition of flour and baking powder gives these flapjacks an irresistibly soft, moist and crumbly texture.

    • 150g porridge oats
    • 2 tablespoons plain white flour
    • 1 teaspoon baking powder
    • 5 tablespoons golden syrup
    • 4 tablespoons soft dark brown sugar
    • 200g unsalted butter
    • 1/2 teaspoon vanilla essence
    • 1 teaspoon ground cinnamon
    • 1 pinch salt

    1. Preheat the oven at 160 degrees C and line a cake or brownie tin.
    2. Melt the butter and syrup together in a pan on low heat. Once smooth, stir in the brown sugar, cinnamon, vanilla and salt.
    3. Take off the heat and add the oats, flour and baking powder to the pan. Mix well. (If the mixture becomes too stiff to mix, put back on a low heat.)
    4. Add to lined tin and smooth out. Put in the oven for 20-30 minutes or until golden on the top but still soft. (It will harden a little once cool so don't over-cook!)
    5. Cut into squares and enjoy while still warm or once cooled.
