Ultimate cheese scones

    A recipe for very cheesy Cheddar scones which my family really love, especially with whipped cream and strawberry jam.

    Makes: 12 to 16 scones

    • 300g Cheddar cheese
    • 175g self raising flour
    • 1/2 teaspoon baking powder
    • 1 pinch salt
    • 25g butter
    • 100ml milk
    • milk for glazing

    1. Preheat your oven to 220 C / Gas 7.
    2. Grate the cheese finely in to a large bowl then sift in the flour, baking powder and salt.
    3. Cut the butter into very small chunks then add to the bowl and rub the butter in until you get what looks like fine breadcrumbs.
    4. Mix in the milk gradually then use a blunt knife to mix everything well.
    5. With your hands gently press the mixture together to make a soft dough then sprinkle flour onto a clean work surface.
    6. Use a rolling pin to roll out the dough to about 1/2 inch (1cm) thick then use cutters to cut them out.
    7. Line a tray with parchment and place the shapes on the tray, leaving space as they will rise. Brush a little milk over each one.
    8. Bake the scones for about 10 minutes or until they have gone golden brown. Leave them to cool before adding cream and jam.
