Chop the leeks quite thinly. Chop the carrots however you like.
Add the leeks, carrots and rice to a pan of water and boil until tender.
Use a blender to mix some olive oil with a handful of fresh basil or parsley to make the dressing.
Drain the pan and place the contents on a plate. Drizzle the dressing over the meal, then sprinkle with lemon juice. Garnish with basil or parsley leaves, if liked.
Feel free to experiment with different vegetables and herbs with this dish. You can also add meat or Quorn® to the dish, either whilst the veg and rice are cooking, or it can be cooked in a separate pan and added at the end.
