BBQ baked eggs with bacon, cheese and parsley

    When my daughter suggested this dish I was a little unsure as to how it would turn out but it was lovely. We now make this as a breakfast dish served with toast. Yummy.

    Serves: 8 

    • 8 eggs
    • 120ml double cream
    • 3 tablespoons BBQ sauce
    • Tabasco® sauce
    • 60g blue or feta cheese
    • 1 tablespoon fresh chopped parsley
    • 8 rashers smoked bacon, cooked and chopped
    • salt and black pepper, to taste

    1. Preheat the oven to 200 C / Gas 6. Grease eight 125ml ramekins.
    2. Crack an egg into each of the ramekins. Pour a little cream into each, equal amounts. Add a touch of BBQ sauce into each. Add a dash of Tabasco® to each.
    3. In a bowl, crumble the cheese into it and add the parsley and bacon, then mix using your hands. Sprinkle equal amounts into each of the ramekins. Season with salt and pepper. Place the ramekins onto a baking tray.
    4. Bake in the preheated oven for 10 minutes. Serve with toast (soldiers for the little ones). Enjoy!
