Meatloaf done my way.

    I hate meatloaf that us full of vegetables. Some is fine but mine has none, just the flavouring of some.

    • 500g minced beef or lamb
    • 12 rashers of bacon, cooked and finely chopped
    • 3-4 tbsp Worcestershire sauce
    • 3-4 eggs, dependant on size
    • 1 tbsp chopped fresh rosemary
    • 2 cups fresh breadcrumbs
    • 2-3 tbsp BBQ sauce
    • 1 cup chopped fresh parsley
    • 2 tsp fresh chopped thyme
    • 2 tsp onion powder
    • 2 tsp garlic powder


    1. Put mince and bacon into a large bowl. Add all the herbs and spices and mix well with your hands. Add all the sauces and mix well with your hands. Add the breadcrumbs and crack in the eggs. Mix until well combined.
    2. Line a loaf tin with parchment paper and pour in the mince mixture. Bake in a preheated oven at 230 degrees C for around 1-1&1/2 hours. Serve with masted mashed potatoes and enjoy.
