Cherry almond loaf cake

    This moist and delicious cherry almond loaf cake is easy to make and great to have on hand for afternoon tea, or a packed lunch.

    Serves: 10 

    • 220g margarine
    • 220g caster sugar
    • 3 large eggs
    • 220g self raising flour
    • 110g glace cherries
    • 50g ground almonds
    • 50g chopped nuts
    • 50g candied peel
    • 1 pinch ground nutmeg

    1. Preheat the oven to 180 C / Gas 4 and grease and line a 900g loaf tin.
    2. In a bowl, cream together the margarine and sugar then add the eggs, one at time and beat well after each addition. Sift in the flour then add the reminader of the ingredients and mix well. Transfer to the prepared loaf tin.
    3. Bake in the preheated oven for 90 minutes or until a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool. Remove from the tin and remove the baking parchment and discard. Slice and serve.
