4 tablespoons butter
110g sliced leeks
1 clove garlic, minced
225g mashed potato
85g plain flour

In a frying pan over a medium heat, melt two tablespoons butter then add the leeks and cook and stir for 5 minutes until soft. Add the garlic and cook and stif for a further 5 minutes. Remove from the pan and place in a mixing bowl with the potatoes. Mix well then form into 4 potato cakes.
In the same frying pan melt the remaining butter. Coat the potato cakes in the flour and then fry on each side for 6 to 9 minutes until golden brown and warm through. Remove from the pan and serve hot.
