Potato cakes with leeks

    These potato cakes with leeks are a wonderful side dish to a variety of dishes and they go particularly well with fish and pork dishes.

    Makes: 4 potato cakes

    • 4 tablespoons butter
    • 110g sliced leeks
    • 1 clove garlic, minced
    • 225g mashed potato
    • 85g plain flour

    1. In a frying pan over a medium heat, melt two tablespoons butter then add the leeks and cook and stir for 5 minutes until soft. Add the garlic and cook and stif for a further 5 minutes. Remove from the pan and place in a mixing bowl with the potatoes. Mix well then form into 4 potato cakes.
    2. In the same frying pan melt the remaining butter. Coat the potato cakes in the flour and then fry on each side for 6 to 9 minutes until golden brown and warm through. Remove from the pan and serve hot.
