Tomatoes with fresh basil and balsamic glaze

About this recipe: This easy, small starter or side salad dish takes less than 10 minutes to prepare. You can use any tomatoes; it's good with baby plum tomatoes. I mop up any of the sauce left at the bottom with crusty bread!

Serves: 2 

  • 12 baby tomatoes (or 3 large)
  • drizzle of olive oil
  • sea salt and freshly ground black pepper
  • drizzle of balsamic glaze
  • 1 handful fresh basil leaves, roughly torn

  1. Halve the baby tomatoes and place in a bowl. If using larger tomatoes cut into wedges.
  2. Drizzle over the olive oil. Add the balsamic glaze. Season with salt and freshly ground pepper. Add the torn basil leaves, mix well and serve.
