Beef stuffed marrow

    Make marrow fun with this great stuffed marrow recipe featuring lean beef mince and other veggies as a flavourful filling. Ready in about an hour and half makes this a great weekend option - serve alongside a fresh salad.

    • 1 marrow
    • 55g salted butter
    • 2 onions, chopped
    • 450g lean beef mince
    • 4 tomatoes - skinned, seeded and chopped
    • 2 carrots, sliced
    • salt and pepper, to taste
    • chopped fresh parsley, to taste
    • chopped fresh chives, to taste
    • 1 teaspoon chopped fresh coriander
    • 55g dried breadcrumbs
    • 2 egg yolks
    • 55ml single cream
    • 110g grated Parmesan cheese

    1. Preheat the oven to 180 C / Gas 4.
    2. Cut the marrow in half lengthways and remove the seeds. In a frying pan over a medium heat, melt the butter and add the onions, mince and tomatoes and cook and stir until the mince has browned. Remove from the heat and stir in the carrots, seasoning and herbs.
    3. In a separate bowl, combine the breadcrumbs with the beaten egg yolks and cream. Add to the mince and stir together.
    4. Lay the marrow halves on a baking tray with the cut side up, and spoon the filling inside. Sprinkle with cheese.
    5. Bake in the preheated oven for 1 hour or until the marrow is tender. Remove from the oven and serve hot alongside a salad.
