Chorizo and pancetta pasta

    This is a quick easy to do recipe that is very filling. I recommend only making small portions. The measurements may be a little off as I make it by eye, not by weighing stuff out.

    Serves: 2 

    • 120g pasta
    • 2 teaspoons olive oil
    • 1/2 chorizo sausage, sliced
    • 130g pancetta, diced
    • 1 handful chopped fresh basil
    • 1 small handful rocket

    1. Place the pasta in a boiling water and cook for about 10 minutes, or till al dente.
    2. Meanwhile, add olive oil to a frying pan and add the chorizo. When starting to crisp, add the pancetta. Cook for 5 minutes. Remove to a bowl when done.
    3. When the pasta is done drain away the water and place in the bowl with the chorizo and pancetta. Toss well and sprinkle a little bit of basil on the top. To finish off serve with some rocket.


    Add as much or as little as you want of the chorizo and pancetta. I recommend more pancetta than chorizo as the chorizo does have a strong flavour. I don't place a sauce on the dish as the flavours are pretty strong and chorizo gives off a lot of juice. Any suggestions for improvement are welcome. I have only just started cooking.
