Place the pasta in a boiling water and cook for about 10 minutes, or till al dente.
Meanwhile, add olive oil to a frying pan and add the chorizo. When starting to crisp, add the pancetta. Cook for 5 minutes. Remove to a bowl when done.
When the pasta is done drain away the water and place in the bowl with the chorizo and pancetta. Toss well and sprinkle a little bit of basil on the top. To finish off serve with some rocket.
Add as much or as little as you want of the chorizo and pancetta. I recommend more pancetta than chorizo as the chorizo does have a strong flavour. I don't place a sauce on the dish as the flavours are pretty strong and chorizo gives off a lot of juice. Any suggestions for improvement are welcome. I have only just started cooking.
