About this recipe: This potato dish is a really flavorsome treat, can be served either as filled potato skins or as a creative mash potato side dish.

Serves: 4 

  • 1/2 teaspoon mixed herbs
  • 2 cloves garlic, crushed
  • 2 tablespoons butter
  • 2 large potatoes
  • 1 onion, diced
  • 1 teaspoon olive oil
  • 150g bacon, diced
  • 300g cheese, grated

  1. Preheat oven to 200 C / Fan 180 C / Gas 6.
  2. Mix the herbs, crushed garlic and the butter together. Stab the potatoes 7 times (at least) with a fork and rub the garlic and herb butter on the potatoes. Wrap the potatoes in foil and place onto a baking tray.
  3. Place into the oven for 1 1/2 hours (2 hours for very large potatoes).
  4. After the potatoes have been cooking for 3/4 of the allotted time, place the onion into a hot pan with olive oil cook for 10 minutes. After the 10 minutes add the diced bacon, and fry until the bacon is cooked.
  5. After the potatoes have been cooked, remove from the oven and remove from foil and cut in half. Allow to cool for 5 minutes. Scoop out the cooked potato, leaving the skins in tact, and place into a bowl, add the cooked bacon and onions and the cheese to the potatoes and mix.
  6. This is where it can go two ways, you can either: have the potato mix as a mash side dish. Or you can place the potato mix back into the skins, sprinkle cheese in top and bake for another 5 minutes.
