Pol rotti (Sri Lankan flatbread)

    This is a favourite amongst us Sri Lankans. We love to eat this roti with some Lunu Miris (a sort of a chilli and onion based chutney) and a dhal or meat curry (or both).

    Makes: 10 to 12 rotis

    • 375g plain flour
    • 1 small coconut, grated
    • salt, to taste
    • 225ml water
    • 1 tablespoon olive oil
    • 1 large onion, chopped
    • 5 green chillies, chopped

    1. Sift the flour in to a bowl. Add the coconut and salt. Mix well.
    2. Start adding the water to the flour mixture gradually, mixing until it forms a dough. Add the oil, onion and chilli, and knead into the dough.
    3. Take walnut-sized pieces of the dough and roll into little balls, not using any additional flour. Oil your hands if the dough is too sticky.
    4. Heat up a non-stick frying pan on a medium high heat. Dust your hands with some flour, flatten each dough ball in your hand and place in the frying pan. Cook till both sides are browned.


    If you want to use desiccated coconut, use 120g.
