Almond nut butter is a great way to boost your almond intake, which are packed full of vitamins, minerals, protein and fibre! Try this recipe created by Carey Davis-Munro, Founder of Sweet Virtues super food truffles.
Spread the almonds out on a shallow oven dish, drizzle very lightly with olive oil and roast slowly until they are a pale golden brown. Be careful to keep watch of them as they will suddenly change colour and can burn.
Remove the almonds, and allow to cool slightly before transferring to a kitchen blender, food processor or similar. Whiz for 30 seconds or so until the nuts start to become a paste and use a spatula to ensure it is all brought in from the edges.
Add the coconut oil and salt to taste and and then whiz again for a further 30 seconds until you reach the consistency you are happy with. Longer for smoother consistency, shorter for a crunchier mouthfeel.
Remove into containers and either place in the fridge or cupboard depending on how you like to enjoy your nut butter. Enjoy!
