About this recipe: This is the only way to eat broad beans. Once you have tried it you will not have them any other way!
If you cannot use the freshest broad beans, older ones can be used but you may need to blanch them and remove their skin. This can sometimes be tough on older, shop bought broad beans. To blanch, cover the beans in boiling water for about 30 seconds then squeeze the bean out of its skin. Now add to the bacon and stir a little to cook through.
