2 tablespoons olive oil
1 clove garlic, minced
1 shallot, minced
1 teaspoon chopped fresh rosemary
85ml red wine
55ml beef stock
salt and pepper, to taste

Warm the oil in a frying pan over a medium heat then and add the garlic and minced shallot. Cook and stir for 3 minutes until soft, making sure the shallot does not brown. Add the rosemary, wine, stock and seasoning and bring to a simmer for 5 minutes. Serve immediately over your favourite steak.
