Eggnog loaf cake

    The rich flavour of eggnog permeates this quick and easy loaf cake. If you're baking around Christmas and want something both quick and festive, this cake is it!

    Serves: 12 

    • 310g plain flour
    • 125g caster sugar
    • 300ml eggnog
    • 1 1/2 tablespoons orange zest
    • 3 tablespoons sunflower oil
    • 3 1/2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1 teaspoon ground nutmeg
    • 1 pinch ground cinnamon
    • 1 egg

    1. Preheat the oven to 180 C / Gas 4. Grease a 900g loaf tin and line with parchment.
    2. Combine all ingredients in a large mixing bowl. Beat with a wooden spoon until just combined. Transfer to prepared tin.
    3. Bake for 1 hour, or till a skewer inserted in the centre comes out clean. Cool in the tin slightly then transfer to a wire rack to cool completely before slicing.
