    About this recipe: The rich flavour of eggnog permeates this quick and easy loaf cake. If you're baking around Christmas and want something both quick and festive, this cake is it!

    Serves: 12 

    • 310g plain flour
    • 125g caster sugar
    • 300ml eggnog
    • 1 1/2 tablespoons orange zest
    • 3 tablespoons sunflower oil
    • 3 1/2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1 teaspoon ground nutmeg
    • 1 pinch ground cinnamon
    • 1 egg

    1. Preheat the oven to 180 C / Gas 4. Grease a 900g loaf tin and line with parchment.
    2. Combine all ingredients in a large mixing bowl. Beat with a wooden spoon until just combined. Transfer to prepared tin.
    3. Bake for 1 hour, or till a skewer inserted in the centre comes out clean. Cool in the tin slightly then transfer to a wire rack to cool completely before slicing.
