About this recipe: This elderberry cordial with honey is a true elixir. Not only is it delicious, it's immune-boosting and full of vitamin C. The honey in this cordial offers more flavour than sugar and is a nice change from the norm.

Makes: 750 ml elderberry cordial

  • 150g stemmed elderberries
  • 650ml water
  • 3 whole cloves
  • 140g honey

Prep:10min  ›  Cook:30min  ›  Ready in:40min

  1. Place the elderberries, water and cloves in a saucepan. Bring to the boil, then reduce heat to a simmer and simmer for 30 minutes. Remove from the heat and mash the berries with a potato masher to ensure all juice is released.
  2. Pass the mixture through a fine sieve, then press the remaining berries to release every last drop of juice.
  3. Stir in the honey till dissolved. Pour into a bottle or jar, cover and store in the fridge for 2 to 3 months.

This cordial is a little lighter than most. For a sweeter cordial, add more honey to taste, up to a total of 350g.
