Jam-filled biscuits

    These cute jammy biscuits are quite fiddly to make, but the end result is rather pleasing nonetheless.

    Makes: 12 jam filled biscuits

    • 250g self-raising flour
    • 1/2 teaspoon ground cinnamon
    • 50g cold butter, diced
    • 50g caster sugar
    • 1 egg, beaten
    • 2 tablespoons milk
    • 2 tablespoons strawberry jam
    • 1 tablespoon granulated sugar

    1. Preheat the oven to 190 C / Gas 5. Line a baking tray with greaseproof paper.
    2. Sift the flour and cinnamon into a bowl then add the butter and rub until mixture resembles bread crumbs. Add sugar, egg and milk to produce a sufficient dough then knead the dough lightly on a floured surface until smooth.
    3. Divide the mixture into 12 even pieces and roll into balls. Using a floured finger, make a well in each ball and spoon in a little jam then pinch the edges together to enclose the jam and place on the prepared baking tray. Sprinkle the tops lightly with granulated sugar.
    4. Bake in the preheated oven for 10 to 15 minutes until risen and golden brown. Remove from the oven and allow to cool before enjoying.
