Deluxe chocolate fridge cake

    This deluxe chocolate fridge cake is easy to make, simple, and looks stunning when served. A nice recipe to make with the kids.

    Serves: 8 

    • 200g butter
    • 600g dark chocolate
    • 8 tablespoons golden syrup
    • 400g digestive biscuits, broken into pieces
    • 150g mini marshmallows
    • 150g dried cranberries
    • 150g salted peanuts, chopped

    1. Line a 20x30cm baking tin with baking parchment, leaving enough overlap to be able to cover the cake.
    2. In a saucepan over a medium heat, melt the butter, chocolate and golden syrup together, stirring constantly. Remove from the heat and allow to cool slightly.
    3. In a mixing bowl combine the biscuits, marshmallows, cranberries and peanuts and mix well. Transfer to the prepared baking tin then pour the melted chocolate over and mix carefully, then press down gently with the back of a spoon to compact.
    4. Fold the overhanging backing parchment over the top of the cake then place a 200g weight on top. Place in the fridge to set, about 1 hour. Once set, remove from the fridge, slice into squares and serve.

    Scrummy, as it was my birthday I added freeze dried raspberry pieces I got from ebay to make it even more indulgent. These almost no moisture in freeze dried fruit so you can just throw in a handful and not worry about affecting the recipe. (Or was it two handfuls lol!)  -  15 Nov 2015
