    About this recipe: This is a great standby for guests/lunch boxes or just as a snack. Quick and easy to make, what makes it really different and delicious is the addition of sweetcorn.

    Ingredients
    Serves: 4 

    • 8 small courgettes, grated
    • 5 medium eggs
    • 125g plain flour, sifted
    • 1 teaspoon baking powder
    • 110g grated Cheddar cheese
    • 1/2 teaspoon salt
    • 1 large pinch ground black pepper
    • 1 large pinch mustard powder
    • 1 large pinch cayenne pepper
    • 110ml olive oil
    • 1 medium onion, grated
    • 1 (400g) tin sweetcorn, drained

    Method
    Prep:15min  ›  Cook:1hr  ›  Ready in:1hr15min 

    1. Preheat the oven to 180 C / Gas 4. Grease a 900g loaf tin and line with baking parchment.
    2. In a bowl combine all of the ingredients and mix well with the hands. Transfer to the prepared loaf tin.
    3. Bake in the preheated oven for about 1 hour, until the vegetables are tender and the loaf is firm. Remove from the oven and slice and serve warm or allow to cool then slice.

    Tip

    Great using up a glut of courgettes from the garden/allotment. This recipe is freezer-friendly.

    Individual servings

    The mixture can also be poured into smaller individual ovenproof dishes such as ramekins. For small dishes, bake for approximately 20 minutes.
