This is a great standby for guests/lunch boxes or just as a snack. Quick and easy to make, what makes it really different and delicious is the addition of sweetcorn.
Great using up a glut of courgettes from the garden/allotment. This recipe is freezer-friendly.
The mixture can also be poured into smaller individual ovenproof dishes such as ramekins. For small dishes, bake for approximately 20 minutes.
