Fresh green bean soup

    Lovely soup on a cold day to warm up your loved ones. Serve with some warm crusty bread on the side.

    Serves: 6 

    • 2 tablespoons olive oil
    • 2 to 3 spring onions, chopped
    • 1 carrot, chopped
    • 1 green pepper, seeded and chopped
    • 1 pack bacon, chopped
    • 2 tablespoons plain flour
    • 1 glass milk
    • 1kg fresh green beans, trimmed and chopped
    • 1/2 carton tomato juice
    • 1 tablespoon salt
    • 1 teaspoon brown sugar
    • 1 teaspoon paprika powder
    • soured cream, to taste
    • chopped fresh parsley, to taste

    1. Warm the olive oil in a large saucepan over a medium heat. Add the onion, carrot, pepper and bacon. Cook and stir for 5 to 8 minutes until the onion softens. Sprinkle in the flour and cook and stir for a few minutes until golden then add the milk and stir until lump free.
    2. Add the green beans and pour one kettle full of hot water into the pan and bring to the boil. Add the tomato juice, salt, sugar and paprika then reduce heat, cover and simmer for 20 minutes or until vegetables are tender. Serve the soup in warm bowls with a dollop of soured cream and a sprinkle of fresh parsley to taste.
