Make a cut about 2cm deep in the chicken breast to about two thirds of the way into the flesh, cutting at an angle from the top along the breast. Fill with the cheese.
Slice the bacon into three strips lengthways. Wrap this around the chicken and tuck under the breast.
Warm a little oil in a frying pan over a medium heat then add the chicken. Season with pepper and cook for a few minutes until browned. Turn over and brown the other side, seasoning again with pepper. Remove from the frying pan and place on a baking tray.
Bake in the preheated oven until the chicken is no longer pink in the centre and the cheese has melted, about 15 to 20 minutes. Remove from the oven. Add a drizzle of honey and a good dollop of whole grain mustard if desired and serve.
