About this recipe:Simple meal, made with basic ingredients, expecting good flavours and a filling meal. Serve with potatoes, veg, rice, whatever takes your fancy. At the point of serving I added a drizzle of honey over the chicken and a good dollop of whole grain mustard...two flavours that just work wonderfully with bacon and/or chicken in my opinion.

Put the oven on 180 C / 160 C Fan / Gas 4.
Make a cut about 2cm deep in the chicken breast to about two thirds of the way in to the flesh. I cut at an angle in from the top along the breast, then fill with the knob of cheese.
Slice the bacon in to three strips length ways and wrap this around the chicken, tuck under the breast.
Warm a little oil in a frying pan over a medium heat then add the chicken. Season with pepper, and cook for a few minuted until browned. Turn over and brown the other side, seasoning again with pepper. Remove from the frying pan once golden brown on the top and bottom then place on a baking tray.
Bake in the preheated oven for 15 to 20 minutes or until the chicken is no longer pink in the centre and the cheese has melted. Remove from the oven and serve.
