Combine the egg whites and banana in a food processor and blend until smooth, add the baking powder and protein powder and pulse until well incorporated then add any flavouring of your choice. At this stage, make sure the consistency is that of an easy to pour batter and add a little almond milk if necessary.
Heat a little oil in a frying pan over a medium heat then add a ladle of the pancake mixture. Swirl the pan around a little to spread the mixture over the base. Cook for about 20 to 30 seconds until golden brown underneath but the centre is still creamy then flip over and repeat. Remove from the pan and repeat until the pancake mixture is used up. Serve immediately on warmed plates.
You can add toppings of your choice to these pancakes such as fresh fruit, low fat yoghurt, low calorie sweetener or zero calorie syrups.
