Place a layer of onions in the base of the slow cooker. Sprinkle the beef in over the top (browned previously in a frying pan if desired). Add the salt, pepper and thyme to taste and pour in the beef stock.
Cook on Low for 8 hours or High for 5 hours until the beef is tender.
Preheat the oven to 180 C / Gas 4.
Once the time is up, thicken the sauce with the the gravy granules, stirring to help the process along. Gravy works better as it dissolves quicker and thickens faster in the slow cooker.
Spoon the beef mixture into a casserole or pie dish and top with the pastry. Crimp the edges if you're feeling fancy and make two small holes in the top to let any steam escape.
Bake in the preheated oven for 20 to 30 minutes, or until the puff pasty is risen and golden brown. Remove and serve immediately.
