    Moreish cheese biscuits, ideal for snacks or as nibbles. Serve by themselves or with a slice of your favourite cheese on top.

    Makes: 20 cheese biscuits

    • 120g butter
    • 150g plain flour
    • 40g freshly grated Parmesan cheese
    • 90g finely grated Cheddar cheese
    • 1 teaspoon chopped fresh rosemary or thyme

    1. In a mixing bowl combine the butter and flour and rub together until the mixture resembles breadcrumbs. Add in the cheese and herbs.
    2. Work into a solid dough. Put in cling film and work into a fat sausage shape and store in the fridge for at least an hour, or overnight.
    3. Preheat the oven to 180 C / Gas 4. Line a baking tray with baking parchment.
    4. Using a sharp knife cut into 1cm sections and arrange on the prepared baking tray.
    5. Bake in the preheated oven for 12 to 15 minutes. Remove from the oven and cool before serving.


    You can adjust the cheese varieties and amounts as long as it equals 130g.
