Flapjack cake

    Like flapjacks? What about cake? This is a combination of the two that I created by accident. Looks and feels like cake but tastes like flapjack.

    Serves: 8 

    • 200g butter or margarine
    • 250g golden syrup
    • 80g brown sugar
    • 100g porridge oats
    • 250g self-raising flour
    • 1 egg
    • 70ml milk

    1. Preheat the oven to 160 C / fan 140 C / Gas 2/3. Grease a 22cm cake tin and line with baking parchment.
    2. In a saucepan over a medium heat combine the butter, golden syrup and sugar and stir until melted.
    3. In a separate bowl, mix together the porridge oats and flour and add them to the mix, followed by the egg and milk. Mix well then transfer to the prepared baking tin.
    4. Bake in the preheated oven for 50 to 60 minutes or until a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool before slicing and serving. Drizzle with a little extra golden syrup if desired.

    Made this as I love flapjack, but always make it a bit too chewy. This cake is so easy to make-basically the same as making flapjack with some additions. I did think the mixture was very wet, even before adding the milk and egg, but I trusted the recipe and did exactly as instructed. Very glad I did as this is a delicious cake-very wholesome and one of those that taste even nicer on day two, if there is any left! Mine was cooked after 45 mins, so sugggest you check as ovens do vary. Highly recommended though for simplicity to make, and for the flavour. I will be making this again (and again, and again)  -  12 Oct 2017
