Parsnip and mustard mash

    Mash gets a makeover! Parsnips, potatoes and grainy mustard make this an extraordinarily simple but delicious side dish.

    Serves: 4 

    • 2 large parsnips, peeled and diced
    • 2 medium potatoes, peeled and diced
    • 200ml milk
    • 15g butter
    • 2 tablespoons grainy mustard
    • salt and pepper to taste

    1. Place the parsnips and potatoes in a large saucepan and cover with water. Bring to the boil, then simmer till fork-tender, about 15 minutes.
    2. Drain the parsnips and potatoes, then place back in the pan. Over a low heat, add the milk and butter. Mash well to your desired consistency. Stir in the mustard and seasoning. Serve.
