Gem's slow cooker chilli con carne

About this recipe: A recipe I've used for a while now, so easy and yummy, what could be better! Serve over rice for a complete meal.

Serves: 6 

  • 1 teaspoon sunflower oil
  • 1 large onion, chopped
  • 2 cloves garlic, chopped
  • 750g beef mince
  • 2 (400g) tins chopped tomatoes
  • 1 (400g) tin red kidney beans, drained
  • 2 tablespoons tomato purée
  • 2 teaspoons chilli powder
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried marjoram
  • 1/2 teaspoon dried thyme
  • 2 beef stock cubes or stock pots
  • salt and pepper, to taste

  1. Preheat the slow cooker to Auto or High setting.
  2. In a frying pan over a medium heat, warm the oil then add the onions and garlic and cook and stir for 3 to 4 minutes. Add the beef mince and cook and stir until browned, about 6 to 8 minutes. Transfer to the slow cooker.
  3. To the slow cooker add the remainder of the ingredients and give a good stir.
  4. Cook for one hour on High or Auto (the Auto setting will automatically drop down to Low after an hour) then a further 7 hours on Low. Once cooking time is up, remove from the slow cooker and serve hot.


You may need to thicken it up a bit. I sprinkle in around a tablespoon of cornflour and give it a good mix near the end of cooking.

Cooking time

If you're out all day, cooking on Low for the full 8 hours works too. I just like to give it an hour boost on High if I can.
