Spruce up the traditional roastie by adding some fresh rosemary and Parmesan cheese. All the great texture of a classic roast potato but with extra flavour bonus. Ideal for special roast dinners such as Christmas.
Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.
Excellent side dish! It's so simple, yet makes a great presentation. I used red skinned potatoes and garlic infused olive oil seasoning it with a bit of kosher salt and black pepper along with the other ingredients. I tossed them once during cooking.
