Easy mushroom risotto

    This classic Italian dish is delicious, guaranteed to be loved by all the family! It is extremely easy, you need only some patience and away you go. You can even mix it up by swapping the mushroom with ham and peas!

    Serves: 4 

    • 50g butter or oil
    • 1 large onion, finely chopped
    • 100g short grain rice (arborio or carnaroli)
    • 150ml to 250ml chicken or vegetable stock, warmed
    • 25g mushrooms, finely chopped
    • salt and pepper, to taste
    • 25g Parmesan cheese, grated

    1. In a saucepan over a medium heat, melt the butter and add the onion. Cook and stir for 4 to 6 minutes until the onion is soft. Pour in the rice and toss in the butter and onion mixture for 30 seconds until the grains begin to turn translucent. Pour in 25ml of the stock, add the mushrooms then stir continuously until the rice has absorbed the liquid.
    2. Once the rice has absorbed the liquid add in a little more, and continue doing this in intervals until the rice is tender and creamy, but still has a little al dente 'bite' to it.
    3. Remove from the heat and spoon into warmed bowls to serve. Season with salt and pepper, sprinkle with Parmesan cheese and serve. Enjoy your dish! Mamma mia!
