Veggie pasta tagine

    This recipe was inspired by my visit to Morocco on vegetarian food in a tagine. I hope you enjoy this recipe.

    Serves: 1 

    • 100g fusilli
    • 50ml water
    • 2 peppers (different colours), seeded and chopped
    • 1 handful mushrooms, sliced
    • 1/4 onion, chopped
    • 100g to 200g pasta sauce

    1. Into a large wide dish such as a casserole dish or a tagine over a medium heat, combine the pasta, water, peppers, mushrooms, onion and pasta sauce. Bring the mixture to a simmer.
    2. Cover and simmer gently for 10 to 15 minutes or until the pasta is al dente (add a little more pasta sauce or water if the mixture dries out). Remove from the heat, serve, tuck in and enjoy!
