    About this recipe: My favourite ginger bread cookie recipe :)). Found it in Nürnberg, while I visited my gran in Germany. Simple, and so yummy, my brothers gobbled them up in a day!! :)

    Ingredients
    Makes: 40 cookies

    • 6 eggs
    • 180g brown sugar
    • 2 tablespoons honey
    • 1 teaspoon to 1 tablespoon rum (best arac)
    • 2 teaspoons ground cinnamon
    • 1 pint salt
    • 250g ground almonds
    • 250g ground haselnuts
    • 200g candied orange peel
    • 200g candied lemon peel
    • wafers (70mm or 90mm)
    • 200g couverture or icing sugar

    Method

    1. Beat eggs, sugar, honey and rum until frothy. Stir in remainig ingredients. Spread the dow on the wafers.
    2. Lay on a baking tray with baking parchment (not to close to each other!!) and bake in a preheated ofen for 20 minutes on 150°C.
    3. Preferably, cover with couverture or icing sugar when cooled.
    4. enjoy!! :)
