About this recipe: This is a nice sponge with custard or cream, or as a cake with a cuppa. Alternative to Christmas pudding.


Serves: 6 

  • 250g plain flour
  • 2 teaspoons baking powder
  • 100g caster sugar or light brown soft sugar
  • 2 teaspoons mixed spice
  • 115g unsalted butter, softened
  • 1 medium egg, beaten
  • 200ml milk
  • 500g Bramley apples - peeled, cored and diced into 2 cm pieces
  • 2 tablespoons Demerara sugar

  1. Preheat the oven to 190 C / Gas 5. Lightly grease a 20cm loose bottomed cake tin and dust with flour.
  2. In a mixing bowl, combine the flour, baking powder, sugar and spice and mix together. Add the butter and rub in until the mixture resembles fine breadcrumbs. Add the egg and milk and mix to combine until you achieve a dropping consistency mixture. Fold in the apple.
  3. Transfer the mixture to the prepared tin and smooth the surface of the cake with the back of a spoon. Sprinkle the top with the Demerara sugar.
  4. Bake in the preheated oven for 50 to 60 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven and serve warm or allow to cool before enjoying.
