About this recipe: Lovely with leftover turkey or chicken and served with garlic or French bread and salad. We love this on Boxing Day; I hope some of you will try it!

Serves: 8 

  • 340g (12 oz) sliced turkey
  • 4 sticks celery, chopped
  • 4 spring onions, chopped
  • 400g mayonnaise
  • 2 teaspoons lemon juice
  • 110g (4 oz) grated Cheddar cheese
  • salt and pepper, to taste
  • paprika, to taste
  • 1 bag plain crisps, crushed

  1. Preheat the oven to 200 C / Gas 7.
  2. In a mixing bowl combine the turkey, celery, spring onions, mayonnaise, lemon juice and cheese. Mix well to combine then transfer to a baking dish. Season well and add a sprinkle of paprika to taste. Top with crushed crisps.
  3. Bake in the preheated oven for 15 to 20 minutes (no longer or sauce will separate). Remove from the oven and serve hot.
