Preheat the oven to 200 C / Gas 7.
In a mixing bowl combine the turkey, celery, spring onions, mayonnaise, lemon juice and cheese. Mix well to combine then transfer to a baking dish. Season well and add a sprinkle of paprika to taste. Top with crushed crisps.
Bake in the preheated oven for 15 to 20 minutes (no longer or sauce will separate). Remove from the oven and serve hot.
