This recipe is for the cream cheese that I used with smoked salmon, quail egg and caviar blini canapés; a real show stopper, and not only do they look amazing they taste superb too.
Makes: 1 (400g) batch lemon and dill cream cheese
1 small tub creme fraiche
1 small tub plain cream cheese
juice of 1 lemon
1 to 2 teaspoons chopped fresh dill

In a mixing bowl, combine the creme fraiche, cream cheese and lemon juice and mix well until thoroughly combined. Add the dill and mix well.
Either pipe the mixture onto a canapé of your choice using an icing bag/nozzle or simple use a knife to spread on top. Add additional toppings if desired then serve. Alternatively you can store the cream cheese mixture in an airtight container in the fridge for up to 3 days until ready to use.
