Fresh oysters

    Fresh oysters are delicious in their most natural state, with a squeeze of lemon and a little salt, pepper and Tabasco® if desired. At their best when waters are cold, they are a great treat around Christmas, New Year and of course for Valentine's Day.

    Serves: 3 

    • 12 fresh oysters
    • 1 lemon, cut into wedges
    • sea salt and freshly ground black pepper, to taste
    • Tabasco®, to taste (optional)

    1. To shuck the oysters, wrap a tea towel around one hand and hold the oyster rounded side down over a chopping board. Hold the knife in your other hand and look for the hinge between the top and bottom shell, poke the knife in here and when you find an opening slide the knife along the opening further away from the hinge then twist the knife to prise the top shell open. Discard the top shell.
    2. Lay the oysters in their bottom shells over a bed of ice. Season with salt and pepper and serve with lemon wedges and Tabasco® on the side.
