About this recipe: A baked pancake decorated with sliced pears. Reminiscent of clafoutis, this pancake works well as a dessert with custard or ice cream, or as a special weekend brunch treat.

Serves: 8 

  • 2 large firm pears, cored and cut into thin slices
  • 100g caster sugar, divided
  • 2 tablespoons lemon juice
  • 1 1/2 teaspoons lemon zest
  • 60g butter, cubed
  • 6 large eggs
  • 240ml full fat milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt, or to taste
  • 125g plain flour
  • icing sugar for dusting

  1. Toss pear slices with 1/2 of the caster sugar, the lemon juice and lemon zest.
  2. Arrange butter in a 12-inch cast-iron frying pan and place on the centre rack of the oven. Heat oven to 200 C / Gas 6. Remove pan from oven once the butter has just melted, 3 to 5 minutes.
  3. Beat eggs in a large bowl until frothy; add milk, remaining caster sugar, vanilla and salt and mix until just combined. Sift flour into egg mixture and stir until batter is just mixed.
  4. Stir pear slices into the melted butter and spread into a single layer. Pour batter over pears.
  5. Bake in the preheated oven until pancake is set in the middle, the sides have risen, and the bottom is browned, 28 to 30 minutes. Top pancake with icing sugar and serve warm.
