Easy peasy stir fry satay chicken

    This is one of my favourites. It is so so simple to make and super quick. A quicker option would be prawns to replace the chicken or frying steak. I normally enjoy these with soft noodles or naan bread. And if you like more spice add chilli powder or flakes at any time to the recipe.

    Serves: 2 

    • oil, as needed for cooking
    • 3 to 4 chicken breasts, cut into strips
    • 1 pack mixed stir fry vegetables
    • 5 tablespoons sweet chilli sauce
    • 1 heaped tablespoon peanut butter (crunchy or smooth)
    • 1 teaspoon soya sauce

    1. Warm the oil in a wok over a medium heat then add the chicken and cook and stir until golden brown and no longer pink in the centre.
    2. Add the vegetables and stir fry for 2 minutes then add the chilli sauce, peanut butter and soya sauce and cook until well mixed. Remove from the heat and enjoy!
