Crab strudel

    A delicious savoury strudel, perfect for a summer buffet or picnic. Also great for evening party nibbles.

    Serves: 4 

    • Fry light®, as needed for cooking
    • 3 spring onions, chopped
    • 2 cloves garlic, minced
    • 1 teaspoon mild curry powder
    • 450g crab meat
    • 2 teaspoons chopped fresh parsley
    • juice of 1 lime
    • salt and black pepper, to taste
    • 10 sheets filo pastry
    • 25g wholemeal breadcrumbs

    1. Preheat the oven to 200 C / Gas 6. Line a baking tray with baking parchment.
    2. Heat a frying pan over a medium heat and spray with cooking oil. Add the spring onion and garlic and cook and stir until the onion is soft, then add the curry powder and stir.
    3. In a large bowl combine the crab meat with the parsley, lime juice, salt and pepper, mix together gently and then add to the onion mixture in the pan.
    4. Unfold the filo pastry then take one sheet and spray with cooking oil then sprinkle with breadcrumbs. Repeat the process by laying a second sheet over until you have used 5 sheets. Make a second strudel by repeating with the remaining 5 sheets.
    5. Spoon a 2.5cm (1 in) wide row of the crab mixture along the long side edge of sheets then roll it up along the long side. Repeat with the second strudel. Place the two strudels onto the tray and score each into 4cm (1.5 in) pieces.
    6. Bake in the preheated oven for 12 minutes, or until the top is lightly brown. Slice and serve as part of a buffet or cut into two and serve with salad for four people.
