Pepperoni and cheese tortilla

    This dish is perfect for a quick on the go snack at the office or on a picnic. Or it is a good dish or snack if you don't have enough time to make a meal for the family or that you need something quick to make.

    Serves: 1 

    • oil, as needed for cooking
    • 2 tortillas
    • 25g to 50g grated Cheddar cheese
    • 25g to 50g pepperoni
    • salt and pepper, to taste

    1. Over a medium heat, warm a little oil in a frying pan large enough to lay a tortilla down flat inside. Place one of the tortillas in the frying pan and heat through for one minute.
    2. Sprinkle over the cheese and the pepperoni then season and lay the second tortilla on top. Using a plate to help you, flip over the tortillas and cook for two minutes, or until the cheese has melted and the tortillas are golden brown. Transfer to a serving plate, slice and serve.


    If you wanted to you could put what ever you like in it, and you could serve it with a warm tomato salad.
