About this recipe:Potato salad that's easy and quick to make, and tastes great. This is my take on a classic potato salad, you can pretty much add anything you want into this, as it's a good base and is just made from ingredients that most people will have all the time, no fancy ingredients here!
Bring a saucepan of lightly salted water to the boil over a high heat and add the potatoes. Cook potatoes until they are soft but keep their shape, 8 to 12 minutes. Drain and allow to cool, about 1 hour (running them under cold water speeds this up).
Into a frying pan over a medium heat, add the onions, a splash of water and the brown sugar. Caramelise the onion until soft and brown, stirring frequently (you may need to add more water to prevent sticking).
In a bowl, mix together the mayonnaise, mint sauce, salt, pepper and paprika, then add the sweetcorn and onions and mix.
When the potatoes have cooled, add them to the mayonnaise mixture and stir until all the potatoes are coated. Serve at room temperature, or chill in the fridge for 10 to 15 minutes before serving.
