Animal cheese biscuits

    These are the cheesiest cheesy biscuits I have ever tasted, and the kids love them. Ideal for after school snacks and picnics.

    Makes: 25 cheese biscuits

    • 100g plain flour
    • 50g butter
    • 1 pinch salt
    • 50g mature Cheddar cheese, grated
    • 1 small egg yolk
    • 1 tablespoon water
    • milk, to glaze

    1. Preheat the oven to 200 C / Gas 6.
    2. Place the flour into a mixing bowl, add the butter and rub it together with your fingertips until the mixture resembles fine breadcrumbs. Mix in the salt and grated cheese, followed by the egg yolk and water and mix well. Draw the dough together with your hands and shape into a large ball.
    3. Turn the dough out onto a lightly floured surface and knead gently until smooth. Roll out to a thickness of of about 3mm. Using different shaped animal cutters, cut out animal shapes. Arrange on lightly greased baking trays and brush all over with milk.
    4. Bake in the preheated oven for 15 minutes or until golden brown. Remove from the oven and transfer to a wire rack to cool before enjoying.

    Lovely and crispy biscuits. I added a little too much cheese though. The kids loved them so will definitely be making them again  -  08 Jul 2015
