Authentic pasta sauce

    One thing the Italians do really well is simple pasta sauce which tastes amazing. This pasta sauce is simple and packed with flavour and goes with any pasta dish.

    Ingredients
    Makes: 1 400g batch authentic pasta sauce

    • 390g passata with basil
    • 3 teaspoons caster sugar
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground pepper
    • 3 teaspoons dried or chopped fresh oregano
    • 1 teaspoon dried or chopped fresh basil
    • 1 teaspoon dried or chopped fresh parsley
    • 1 teaspoon dried or chopped fresh thyme
    • 1/2 teaspoon dried or chopped fresh rosemary

    Method

    1. Place all ingredients in a medium saucepan over a high heat. Heat until the mixture is about to boil then reduce the heat. Simmer for at least 45 minutes until the sauce is thickened and well cooked together. Turn off the heat and leave the pan on the ring to cool down. Use or store in an airtight container in the fridge for up to 1 week.
