Fluffy and naturally white buttercream

    This is my ultimate fluffy buttercream! Easy to pipe and looks and tastes super yummy! It's easy to make as long as you don't rush.

    Makes: 1 650g batch of buttercream

    • 200g soft unsalted butter
    • 450g icing sugar
    • 1 splash vanilla extract, or extract of your choice
    • 1 to 2 drops food colouring (optional)
    • 2 to 3 tablespoons milk, if needed

    1. First make sure your butter is super soft then put it into your mixing bowl. Using your hand mixer or stand mixer, beat on high speed for 10 minutes until light and fluffy and pale white .
    2. Next place a tablespoon at a time of icing sugar in, turning to low speed so you don't get powder everywhere. Mix in your extract and food colour gel (if using).
    3. If it seems too thick add some milk a tablespoon at a time but don't make it too runny or it wont pipe or stay on your cake.
    4. Now it is ready to pipe onto cupcakes or cakes, or use a spatula if you don't have a piping bag.


    The key here is time. Dont rush and don't over whip your butter as it will split.
