Place the fruit and sugar in a bowl and pour the tea over and leave to soak overnight, two tea bags should provide about the right strength of tea. The next day the fruit should have absorbed much of the tea.
The next day, preheat the oven to 170 C / Gas 3. Grease a 22x13cm (900g) loaf tin and line with baking parchment.
Add the flour, egg and mixed spice to the soaked fruit mixture and stir until thoroughly combined. Transfer to the prepared loaf tin.
Bake in the middle of the oven for 80 minutes until risen and firm to the touch, or until a skewer inserted into the centre comes out clean. Remove from the oven and cool before serving.
