Slow cooker BBQ pulled pork

    This is such an easy dish to make and is delicious! But when it says slow cooker it means sssslow! It is however, a great dish to prepare the day before if like me you are doing it for a party.

    Serves: 8 

    • 1.1kg ( 2 1/2 lb) pork shoulder, as it comes no need to trim
    • 1 teaspoon brown sugar
    • 1 medium onion, chopped
    • 1 tablespoon lemon juice
    • 1 bottle shop-bought BBQ sauce

    1. Preheat the slow cooker to Low setting.
    2. Place the pork in the slow cooker with the onion and cook on Low for 10 to 12 hours until the pork is tender and breaking apart with a fork.
    3. Remove the pork and shred with a fork. At this stage I remove the layer of fat. Leave a cup full of the juices and drain the rest.
    4. Return the pork to the slow cooker with the retained juices. Add the rest of the ingredients, give it all a good mix and cook on low for another 2 hours.


    If you are cooking it the day before, once you have shredded the pork and added the rest of the ingredients, you can then leave it to cook the remaining 2 hours the day you are going to use it. I served this with a spicy coleslaw and bread rolls.

    I used a 2kg pork shoulder so adjusted the ingredients accordingly. Was very nice and lasted for ages!  -  27 Oct 2015
