- Preheat the barbecue to a medium-high heat.
- In a bowl, mix together the lemon juice, sugar or honey, ginger, soya sauce and pepper.
- With a sharp knife, score the chicken drumsticks about three times in the thickest part, then toss the chicken in the glaze.
- Place the chicken on the barbecue turning occasionally and brushing with the glaze, until the chicken is no longer pink in the centre, the skin is golden and the juices run clear when pierced, about 15 minutes. Remove from the heat and serve.
This can also be done with chicken breast or goujons if you don't like drumsticks. Best results if you marinade the chicken for 30 minutes.
Alternatively, you can cook the chicken under a medium-high grill, turning often, until no longer pink in the centre, about 15 to 20 minutes.
