    Baking is fun, especially when it's Mothers Day and you're baking for that special lady. Treat her this Mother's Day with my yummy mummy biscuits that are perfect for adults and little ones.

    Makes: 12 yummy mummy biscuits

    • For the biscuits
    • 5 tablespoons plain flour
    • 5 tablespoons caster sugar
    • 50g butter or margarine
    • 1 teaspoon milk, if needed
    • For the buttercream
    • 50g icing sugar
    • 25g margarine

      For the biscuits:

    1. Preheat the oven to 190 C / Gas 5.
    2. Combine the flour and sugar into a mixing bowl and stir with a spoon to mix. Add the butter and using your hands, mix and knead until all the ingredients have come together to form a dough. If you have trouble bringing it together, add a teaspoon of milk.
    3. Separate the dough into two equal parts. Use a cookie cutter of your choice and cut out shapes (I used a heart). To make one full cookie cut out two of the same shape. You do this because it is going to be like an Oreo.
    4. Bake them in the preheated oven for around 15 minutes or until they are golden brown. Remove from the oven and allow to cool fully on a cooling rack.
    5. For the buttercream:

    6. Meanwhile, combine the icing sugar and margarine and beat until thick and creamy.
    7. All you need to do is put some of the buttercream on top of a biscuit and then place another biscuit on top to sandwich. Now you can give them to your Mother or Grandmother!

    At step two, you can use gel food colouring or just leave it plain. You can also add chocolate chips, marshmallows etc. You can also add food colouring to this buttercream.
