Place the bowl of frozen pineapple in hot water for about 1 minute (or you can take it out of the freezer and let it sit at room temperature for 15 minutes). Pour any juice into a food processor then turn out the pineapple onto a chopping board and chop into 2.5cm (1 in) cubes.
Place in the food processor with the juice, rum and coconut cream, and process until smooth, about 1 minute.
Serve at once, or transfer to a container, and place back in the freezer until needed.
