About this recipe: This honey glazed gammon is delicious served as the centrepiece to a roast dinner or it can be shredded and served with feta cheese in my leftover gammon salad.

Serves: 4 

  • 1 (1kg) gammon joint
  • 5 teaspoons honey
  • 2 teaspoons wholegrain mustard
  • salt and pepper, to taste

  1. Place the gammon joint in a bowl of cold water for about an hour, this removes the saltiness.
  2. After an hour, drain the water and place in a pan over medium-heat with hot boiling water.
  3. Remove from pan after a further hour, cut in half and score the skin. Place on a baking tray and cover with foil.
  4. Preheat the oven to 200 C / Gas 6.
  5. Bake in the preheated oven for 1 hour and 30 minutes. Drain juices out of the pan and remove the foil.
  6. To make the glaze add 5 teaspoons of honey, 2 teaspoons of wholegrain mustard and salt and pepper to taste. Mix well and add over the hot gammon.
  7. Bake in the oven uncovered for a further 10 minutes making sure the gammon is glazed all over. Remove from the oven and leave to rest 20 minutes before serving.
